1 cup whole or 2% milk1 cup heavy or whipping cream2 tablespoons granulated sugar2 tablespoons unsweetened Dutch-process cocoa, sifted1 tablespoon cornstarch, sifted1 pinch salt3 oz (85 g) good dark chocolate (around 52%), chopped1½ tablespoons infused coconut oil — carrying 30 mg THC total (oil at ~20 mg/tbsp; scale the volume to your own tested oil and keep the batch total at 30 mg)
Stoney says: start low, go slow — the forest isn't going anywhere. Wait 90 minutes before seconds.
Steps
- Sift the cocoa and cornstarch together into a small bowl so there are no lumps to chase later.
- Warm the milk and cream in a saucepan over medium heat until steaming but not simmering. Whisk in the sugar, then the cocoa-cornstarch mixture, and cook a minute or two until it thickens slightly.
- Off the heat, add the salt and chopped chocolate and stir until completely smooth.
- Let the pan cool for 10–15 minutes, until the base is warm rather than hot — comfortable on the back of a spoon against your wrist, well under 175 °C / 350 °F territory.
- Add the melted infused coconut oil and blend the base with an immersion blender (or in a jug blender) for 30 seconds. Blending, not stirring, is what keeps the oil suspended so every pop carries the same dose. Blend the whole batch at once — never dose individual moulds.
- Pour immediately into a 6-cavity popsicle mould, dividing evenly to the same fill line in each. If your mould cavities differ slightly, weigh the base and pour equal weights.
- Insert the sticks and freeze 5 hours or overnight. Run the mould under warm water for a few seconds to release.
- Label: if you're storing them out of the mould, wrap each pop and mark it — Infused fudge pop · 5 mg THC each · 30 mg per batch of 6 · made [date] — and put the same note on the freezer bag. One pop is one dose.
