Steps

Chop the parsley fine with a sharp knife and mince the garlic. Hand-chopping keeps the texture loose and spoonable; a food processor turns it to purée, which makes portioning harder to eyeball against the measuring spoon.
Scrape both into a medium bowl. Add the oregano, salt, pepper and chilli flakes, then the vinegar, and stir so the salt dissolves into the acid before any oil goes in.
Pour in the olive oil and stir until the sauce looks glossy and evenly green.
Add the tincture and stir steadily for 30 seconds, working the spoon through the whole bowl and scraping the sides. The oil and vinegar will carry it, but only if everything gets moved.
Cover and rest at room temperature for 10–30 minutes so the flavours meld. Stir once more at the end of the rest.
Decant into a 250 ml jar, scraping the bowl clean. Keep refrigerated up to 4 days. The oil will firm up cold, so let the jar stand at room temperature and stir before serving — a separated jar portions unevenly. Serve with a measuring spoon.
