Steps

  1. Heat the oven to 325 °F / 165 °C and grease an 8×8-inch baking dish. The lower temperature is deliberate — keep it there.
  2. In a large bowl, whisk the oats, brown sugar, cinnamon, baking powder and salt.
  3. In a second bowl, whisk the room-temperature milk, applesauce, egg and vanilla. Room temperature matters: cold liquid will set the coconut oil into specks and the dose stops spreading evenly.
  4. Melt the infused coconut oil gently and whisk it into the wet mixture for 30 seconds, until smooth with no oil slick on top.
  5. Pour the wet mixture into the dry, stir well, and fold in the raisins. Scrape the bowl clean so all the infused oil goes into the pan.
  6. Spread level in the dish and bake 35 to 45 minutes, until set in the centre and golden at the edges. It will take a little longer than a 350 °F bake — judge by the set centre, not the clock.
  7. Cool at least 20 minutes, then cut a clean 2×3 grid: two cuts one way, one the other, giving 6 equal squares. For precision, weigh the cooled slab and check each square lands near one-sixth of the total; trim and even them out before anyone takes one.
  8. Lift the squares into individual containers for the fridge (up to 5 days) or freezer. Reheat gently — a short, low microwave or a warm oven; no blasting under a broiler.
  9. Start low, go slow: one square is one serving. Wait a full two hours before deciding anything.
  10. Label the container: Cinnamon Raisin Baked Oatmeal Squares · 30 mg THC total · 5 mg per square · 6 squares · made [date] · 21+ only.
