6 fresh mint leaves, plus a sprig for the top1 fl oz (2 tbsp) fresh lime juice1 level tablespoon (½ fl oz) infused simple syrup at 5 mg THC, poured with a jigger4 fl oz (½ cup) soda water or tonicIce

Steps

  1. Put the mint leaves in the bottom of a shaker and press them a few times with a muddler — bruised, not shredded.
  2. Add the lime juice. Now measure the infused syrup into a jigger, check it at eye level, and tip it in. One tablespoon, once, per glass — never free-pour from the bottle and never add a second splash "to sweeten."
  3. Fill the shaker with ice and shake until the outside frosts over.
  4. Strain into an ice-filled glass, top with the soda water, and finish with the mint sprig.
  5. Label it: if you're building these for guests, write a card for the drinks station — "Infused cooler — 5 mg THC per glass, one glass each. 21+ only." Hand each glass over with the number said out loud, and keep an undosed syrup bottle beside it for anyone topping up.
