Steps

  1. Leave the plain butter at room temperature until fully soft. Miso is stiff and will tear through cold butter in streaks instead of blending.
  2. Brown the infused butter in a small pan over medium-low heat until the solids are amber and nutty-smelling, then take it straight off — no smoke, no high heat. Scrape the lot, solids and all, into a cool bowl and let it firm back to a soft paste, about 30 minutes chilled.
  3. Whisk the miso into the softened plain butter first, until there are no beige lumps left and the mixture is a single smooth colour. Doing this before the dose goes in means less mixing later.
  4. Add the cooled browned infused butter and beat the whole thing together thoroughly, scraping the bowl, until completely uniform. Every streak you leave is a coin that is stronger or weaker than its neighbours.
  5. Fold in the green onions, toasted sesame seeds and garlic.
  6. Scrape onto parchment and roll into one tight log about 20 cm / 8 in long, twisting the ends. (The original divides this quantity into two logs; keep it as one so the dose math stays simple.)
  7. Chill at least 2 hours, until firm enough to slice without squashing.
  8. Unwrap on a cold board, measure with a ruler, mark 12 equal portions, score each mark, then cut. Wrap the coins individually or stack them with parchment between.
  9. Melt one coin over hot corn, roasted broccoli, a sweet potato or a piece of fish as it comes off the heat — one coin per plate, and give it time before a second.
  10. Label the container: Miso & Sesame Brown Butter Log · 60 mg THC total · 5 mg per coin · 12 coins · made [date] · 21+ only.
