135 g (9½ tbsp) unsalted butter, for browning (yields about 113 g browned)57 g (4 tbsp) unsalted butter, softened57 g (4 tbsp) infused butter, softened but never melted — the whole 57 g must carry 60 mg THC total (about 15 mg per tablespoon)2 tbsp white or yellow misoFinely grated zest of 2 lemons½ tsp ground cayenne1 tsp ground toasted cumin½ tsp fine sea salt¼ cup toasted sesame seeds

Steps

  1. Melt the 135 g of plain butter in a light-coloured pan over medium heat. Keep it moving until the foam drops, the milk solids turn hazelnut-brown and it smells nutty. Scrape every brown speck into a bowl.
  2. Cool the browned butter completely — fridge it until it firms up, then let it come back to a soft, mayonnaise-like state at room temperature. This step matters: the infused butter goes in cold, so the dose never sees pan heat.
  3. Beat the cooled browned butter with the 57 g of plain softened butter and the 57 g of infused butter until the three are one uniform, even-coloured mass. Uneven mixing is uneven dosing — keep going past the point where it looks done.
  4. Work in the miso, lemon zest, cayenne, cumin and salt until you can't see streaks of miso anywhere.
  5. Fold in the sesame seeds last, with a spatula, just enough to distribute them.
  6. Weigh the finished butter and note the number. Scrape it onto parchment or plastic wrap, shape a tight cylinder about 20 cm long, twist the ends and chill at least 2 hours until firm all the way through.
  7. Unwrap the cold log. Lay a ruler alongside it, divide the total length by 12, and press 11 score marks with the back of a knife. Measure them — never eyeball them. Each scored coin is 5 mg.
  8. Slice on the score marks as you serve. One coin melts over a steak, an ear of corn or a split baked potato at the table.
  9. Label it. Write on the wrapper and on any storage container: Infused — 60 mg THC total / 12 coins / 5 mg THC per coin, plus the date. 21+ only. Keep it locked away from kids, guests who haven't been told, and pets.
