Steps

  1. Set a clean 250 ml jar and a liquid measuring cup on the counter. Everything here happens at room temperature.
  2. Put the parsley, cilantro, oregano, onion and garlic in a food processor and pulse in short bursts until finely minced — stop while the herbs still look green and distinct, not pureed.
  3. Add the red pepper flakes, olive oil, vinegar and lemon juice. Pulse two or three times only, just enough to bring it together. Season with the salt and taste.
  4. Scrape the sauce into the measuring cup. You want the base sitting just below the 240 ml / 1 cup line — add a little more olive oil if you're short, and if you overshoot, spoon the excess out and set it aside for another use (it isn't dosed yet, so this is free).
  5. Measure your 80 mg of tincture and whisk it into the sauce for a full 30 seconds, scraping the bottom and sides, until the surface looks uniform and there's no slick sitting on top. This is the dose step — don't rush it.
  6. Decant into the jar, seal, and refrigerate at least an hour so the garlic mellows. Shake or stir well before every use; herbs settle, and a settled jar is an uneven jar.
  7. Serve with a measuring spoon — one level tablespoon is one serving. Let people take a second only after waiting a good while.
  8. Label the jar: Measured Chimichurri · 80 mg THC total · 5 mg per tablespoon · 16 tablespoons · made [date] · 21+ only.
