Ingredients · 16 tablespoons · 60 mg total
240 ml / 1 cup honey1–2 jalapeños, thinly sliced (seeds in for more heat)¼–½ tsp cayenne pepper2–4 tsp hot sauce (Cholula, Tapatío or a Louisiana style)Cannabis tincture totalling 60 mg THC — about 6 ml (1¼ tsp) of a 10 mg/ml tincture
Stoney says: start low, go slow — the forest isn't going anywhere. Wait 90 minutes before seconds.
Steps
- Tip the honey into a small saucepan. Add the sliced jalapeños, cayenne and hot sauce, and stir until the chilli is suspended through the honey.
- Set over medium-low heat. As soon as bubbles creep around the rim, drop the heat to low and let the chilli steep for 4–5 minutes. Honey scorches fast — never let it reach a rolling boil.
- Pull the pan off the heat. If you want a smooth honey, strain the slices out now; if you like the candied chilli, leave them in and plan to finish the jar inside a week.
- Let the honey sit off heat for 5 minutes so it is warm and pourable but no longer hot — comfortable on the back of your hand. Add the tincture and whisk hard for a full 30 seconds, scraping the sides and base so no streak of tincture sits alone. Honey is dense; this is the step that makes 16 even spoonfuls instead of 3 strong ones.
- Pour straight into a 250 ml jar while still fluid, scraping the pan clean so all 60 mg lands in the jar. Cool to room temperature uncovered, then lid it. Stir once more before the first use and serve with a measuring spoon, never a free-hand drizzle.
- Label the jar: Jarred Hot Honey · 60 mg THC total · 5 mg per tablespoon · 16 tablespoons · made [date] · 21+ only.
