Stoney says: start low, go slow — the forest isn't going anywhere. Wait 90 minutes before seconds.
Steps
- Calculate the potency of your infused butter per gram and weigh out the amount that puts 60 mg THC into the whole batch; make the measure up to 57 g with plain butter if needed. Note the figure for the label.
- Melt the infused butter in a small pan over medium-low heat and swirl until the solids are golden-amber and smell toasty. Keep it below 175 °C / 350 °F and take it off the heat early rather than late. Scrape it all into a bowl, solids included.
- Cool the browned butter to a soft, spreadable paste — not liquid, not hard.
- Pat the minced shallot, jalapeño and ginger dry on a paper towel. Excess moisture makes a log that weeps and slices badly.
- Cream the 170 g plain softened butter in a bowl until smooth, then beat in the cooled browned infused butter until the colour is uniform throughout. Take your time here; uneven mixing means uneven coins.
- Fold in the shallot, jalapeño, ginger, lime zest, lime juice, salt and sugar until evenly dispersed.
- Mound the butter along a sheet of parchment or wrap, fold it over, and roll it into a tight, even cylinder roughly 18 cm / 7 inches long, pressing out air pockets with a ruler. Twist the ends shut.
- Refrigerate at least 2 hours, or until solid.
- Unwrap the cold log, lay a ruler beside it, and mark 11 evenly spaced score lines for 12 identical coins. Cut cold, with the ruler, every time.
- Slice and serve one 5 mg coin per person over hot grilled corn, roasted sweet potatoes, charred cabbage wedges or a seared pork chop. One coin, then wait — the butter melts faster than the dose arrives.
- Label the wrap or tin: Jalapeño-Lime Corn Coins · 60 mg THC total · 5 mg per coin · 12 coins · made [date] · 21+ only.
