1 scallion, white and green parts, chopped2½ tbsp chopped fresh basil leaves, lightly packed2 tsp fresh lemon juice1½ tsp Dijon mustard1 tsp olive oil1 small garlic clove, chopped¾ tsp kosher salt¼ tsp freshly ground black pepper½ cup (120 ml) good mayonnaise3 tbsp (45 ml) Greek-style yogurt3 tbsp (45 ml) buttermilk, shaken, plus a splash extra for topping upTHC tincture totalling 80 mg (e.g. 8 ml of a 10 mg/ml tincture)
Stoney says: start low, go slow — the forest isn't going anywhere. Wait 90 minutes before seconds.
Steps
- Put the scallion, basil, lemon juice, Dijon, olive oil, garlic, salt and pepper in a small food processor. Run it 15–20 seconds, until you have a smooth green base with no visible chunks of garlic.
- Add the mayonnaise, yogurt and buttermilk. Blend just until the dressing is uniform and pourable — don't over-run it or it thins out.
- Scrape every bit into a liquid measuring cup. Top up with buttermilk, a teaspoon at a time, until the dressing sits exactly at 240 ml. Taste and correct the salt now, before dosing.
- Nothing here is warm, so add the full 80 mg of tincture straight into the measured dressing and whisk for 30 seconds — keep whisking past the point where it looks mixed, so the dose is spread through every spoonful.
- Pour into a clean 250 ml jar, seal and refrigerate at least 1 hour so the garlic and herbs come forward. Shake before each use and portion with a measuring spoon onto salads, wedges or crudités.
- Label the jar: House Ranch · 80 mg THC total · 5 mg per tablespoon · 16 tablespoons · made [date] · 21+ only.
