Steps

  1. Work out the THC per gram in your infused butter and weigh the amount that lands the batch at 60 mg total, padding to 57 g with plain butter if your infusion is strong. Record the number now, for the label later.
  2. Brown the infused butter in a small pan over medium-low heat, swirling, until the solids are amber and fragrant. Stay under 175 °C / 350 °F and err on the early side. Scrape everything, toasted bits and all, into a bowl and leave it to cool to a soft paste.
  3. Beat the 170 g very soft plain butter in a bowl until creamy and light.
  4. Add the cooled browned infused butter and fold, smear and fold again until the colour is completely uniform — no pale streaks, no darker pockets.
  5. Drizzle in the honey and add the salt, plus the cinnamon and thyme if using. Fold slowly at first so the honey does not splash out, then beat until glossy and homogeneous.
  6. Scrape the butter onto parchment or plastic wrap, fold it over and roll into a firm cylinder about 15–18 cm / 6–7 inches, using a ruler to press out air and square up the ends. Twist both ends to seal.
  7. Chill at least 2 hours, until the log is hard through the centre. Honey keeps it a touch softer than a plain log, so give it the full time.
  8. Unwrap onto a cold board, set a ruler alongside, and press or cut 11 even score marks for 12 matching coins. Cold butter and a ruler — never a guess.
  9. Serve one 5 mg coin per person on hot cornbread, split biscuits, roasted squash or sweet potatoes. One coin is the serving; wait it out before anyone reaches for the plate again.
  10. Keep the wrapped log in the fridge for up to 2 weeks, or freeze it for up to 3 months — rescore after thawing if the marks have softened.
  11. Label the wrap or tin: Honey-Brown-Butter Table Coins · 60 mg THC total · 5 mg per coin · 12 coins · made [date] · 21+ only.
