Steps

  1. Dose math first. At 10 mg THC per tablespoon, 4 tablespoons of infused coconut oil puts 40 mg into the batch and 5 mg into each of eight servings. Stronger oil? Use less infused oil and make the ¼ cup up with plain coconut oil. Never take the batch above 80 mg.
  2. Heat the oven to 325 °F / 165 °C — no hotter — and line a rimmed half-sheet pan with parchment.
  3. In a large bowl, stir the oats, nuts and seeds, salt and cinnamon together.
  4. Melt the infused coconut oil gently, over low heat or in short microwave bursts, just until liquid. In a separate small bowl, stir it together with the maple syrup and vanilla so the dose is premixed into the sweetener before it meets the oats — that's your best guarantee of even coating.
  5. Pour the wet mix over the dry and stir until every oat looks glossy. Scrape every last drop out of the bowl with a spatula; anything left behind is dose you've thrown away. Spread in an even layer on the pan.
  6. Bake 28 to 32 minutes, stirring once at the halfway mark and pressing the granola down firmly with the spatula if you want big clusters. Pull it when it's lightly golden — it firms up as it cools, and overbaking costs you both texture and potency.
  7. Cool completely on the pan, undisturbed, at least 45 minutes. Then scatter over the dried fruit and chocolate chips, if using, and break the slab into clusters.
  8. Weigh the whole cooled batch, divide the number by eight, and portion that exact weight into eight jars, bags or deli cups. Don't scoop by eye — clusters cheat volume measures badly.
  9. Label each container: "Infused granola — 5 mg THC per ½-cup serving, 40 mg per 8-serving batch. Made [date]. One serving, then wait." If you store it as one big jar instead, write the serving weight on the label so every scoop is measured.
