Steps

  1. Heat the oven to 175 °C / 350 °F with a rack in the lower third. Line an 8×8-inch metal pan with a parchment sling, pressing it tight into the corners so the bake sits at an even depth.
  2. Whisk the flour, baking soda, salt and cinnamon in a bowl and set it aside.
  3. Brown only the plain butter: melt it in a light-coloured saucepan over medium-low heat, swirl as the foam subsides, and pull it the moment the milk solids turn amber and smell nutty, about 5–8 minutes. Scrape every toasted fleck into a heatproof bowl.
  4. Let the brown butter sit 2 minutes until it stops sizzling, then stir in the infused butter off the heat and keep stirring until it has melted into the warm butter. Residual heat only — the infused fat never meets the burner. Let the mixture cool about 10 minutes, to barely warm.
  5. Whisk the brown sugar into the butter until no dry sugar remains, then whisk in the eggs one at a time, about 30 seconds each, until the mixture is glossy and uniform. This is the dose-dispersal step — a streaky batter is a streaky pan, so don't rush it.
  6. Whisk in the banana, yogurt and vanilla, then fold in the dry ingredients just until no flour shows. Fold in nuts or chips if using.
  7. Scrape the batter into the pan and level it to all four corners with an offset spatula. Bake 32–38 minutes, until the centre springs back and a toothpick carries moist crumbs; tent loosely with foil if the top colours early.
  8. Cool completely in the pan on a rack, at least 90 minutes, then lift out by the parchment. Measure and mark a 4×4 grid and cut 16 equal squares, wiping the knife between cuts.
  9. Label the tin: Go-Slow Brown Butter Banana Bars · 80 mg THC total · 5 mg per square · 16 squares · made [date] · 21+ only.
