Steps

  1. Grate the ginger on the large holes of a box grater and tip it into a small saucepan with the sugar, water, lime zest and salt.
  2. Set over medium-high heat and stir until the sugar has completely dissolved and the syrup just reaches a boil.
  3. Pull the pan off the heat straight away and let it sit, uncovered, until it is cool to the touch — about 1 hour. Do not rush this; warm syrup is the enemy of an accurate dose.
  4. Strain through a fine-mesh sieve into a measuring jug, pressing hard on the ginger and zest to squeeze out every drop. Discard the solids.
  5. Check the volume. You want exactly 240 ml. If you're short, top up with cool water; if you're over, pour the surplus into a separate jar and keep it plain and undosed.
  6. With the syrup fully cool, measure your 50 mg of tincture and stir it into the 240 ml for a full minute, scraping around the sides so it is evenly distributed. Pour into a clean bottle or jar and shake well before every use.
  7. To serve, jigger exactly 1 tablespoon per glass — over ice with fresh lime juice and soda water makes a ginger-lime fizz. Dose one glass at a time; never dose a shared pitcher, and never free-pour. Start low, go slow: give a first glass plenty of time before you think about a second.
  8. Label the bottle: Ginger-Lime Sipping Syrup · 50 mg THC total · 5 mg per tablespoon · 10 tablespoons · made [date] · 21+ only.
