Steps

  1. Set the 157 g plain butter on the counter for an hour until it dents easily under a finger. Cold butter mixes grainy and traps streaks, which is how doses go uneven.
  2. Melt the 85 g infused butter in a small light-coloured pan over medium-low heat. Let it bubble, then quiet down; when the milk solids at the bottom turn amber and smell nutty, take it off immediately — it should never smoke, and the pan stays well under 175 °C / 350 °F.
  3. Scrape every drop, including the browned solids, into a small cold bowl. Let it cool and set back to a soft, opaque paste — about 30 minutes in the fridge, stirring once. Do not add it while liquid or it will melt the base butter.
  4. In a mixing bowl, mash the softened plain butter and the cooled browned infused butter together with a fork or spatula until the colour is completely uniform, with no pale or dark marbling left. This is the only step that distributes the dose, so keep going past the point where it looks done.
  5. Fold in the dill, chives, grated garlic and salt. Mix again until the green flecks are evenly scattered top to bottom.
  6. Scrape the whole mass onto a sheet of parchment. Shape it into a rough cylinder, fold the paper over, and use a ruler or the edge of a baking sheet to roll it tight into a log about 20 cm / 8 in long. Twist both ends closed.
  7. Chill at least 2 hours, or overnight, until firm all the way through.
  8. Unwrap onto a cold board. Lay a ruler alongside and mark 12 equal portions — at 20 cm that is a mark every 1.7 cm. Nick each mark with the knife tip first, check the spacing, then cut straight down through all 12. Score cold and measured, never by eye.
  9. Serve one coin per plate, melted over steak, hot corn or a split baked potato, and let people sit with that one coin before anyone reaches for a second.
  10. Label the container: Dill & Chive Brown Butter Log · 60 mg THC total · 5 mg per coin · 12 coins · made [date] · 21+ only.
