Steps

  1. Heat the oven to 162 °C / 325 °F with a rack in the middle. Line an 8-inch square metal pan with parchment or foil, leaving overhangs on two sides as handles.
  2. In a medium saucepan over medium-low heat, melt only the 5 tbsp plain butter and keep going until it smells nutty and the solids turn golden, about 4 minutes. Take it straight off the burner.
  3. Off the heat, add the 5 tbsp infused butter to the hot pan and stir until it melts into the browned butter — the residual warmth is plenty, and keeping the flame off here protects the potency. Scrape the whole lot so nothing clings to the sides.
  4. Still off the heat, stir in the sugar, cocoa, vanilla and salt. It will look gritty and stiff; that's normal.
  5. Let the pan sit 5–10 minutes until the mixture is warm to the touch, not hot.
  6. Add the cold eggs one at a time, stirring hard after each until the batter turns smooth and glossy.
  7. Add the flour and beat it in with a wooden spoon for a good 40–50 strokes, until the batter is very thick and pulls away from the pan sides. This beating both emulsifies the butter and spreads the dose; it is not optional. Stir in the nuts or chips now if using.
  8. Scrape into the lined pan and spread it evenly, pressing right into the corners so the slab is one uniform thickness.
  9. Bake 20–30 minutes: edges set, centre still a little wet, a toothpick from the middle coming out with moist batter on it.
  10. Cool completely in the pan — chilling it for an hour or two makes the cuts cleanest. Lift out by the parchment and cut a 4×4 grid, wiping the knife between cuts, for 16 equal squares.
  11. Label the tin "Deep-Dark Brown Butter Fudge Brownies — 5 mg THC per square, 16 squares, 80 mg total," with the date, and keep it separate from the un-dosed baking. One square, then wait a couple of hours.
