Stoney says: start low, go slow — the forest isn't going anywhere. Wait 90 minutes before seconds.
Steps
- Measure your infused coconut oil against your tested potency so the batch total is 50 mg, top up with plain coconut oil to 2 Tbsp, and set it near the stove.
- Melt the chopped chocolate in a medium saucepan over the lowest heat you can manage, stirring often so it never scorches.
- Whisk in the milk, sugar, cocoa, cornstarch and salt until smooth, then raise the heat to medium.
- Cook, whisking steadily, for 5 to 10 minutes until the mixture thickens enough to coat the back of a spoon. Pull it off the heat.
- Let it stand 5 minutes so it's warm rather than piping hot, then whisk in the coconut oil and vanilla. Keep whisking for a good 30 seconds — you want zero shine of loose oil on top. If the surface looks beaded, whisk again right before pouring.
- Pour into a jug and fill the ten cavities to just below the rim. The honest way: set the jug on a scale, note the full weight, divide by ten, and pour that weight into each cavity. Tap the mould on the counter to knock out air pockets.
- Insert sticks and freeze at least 4 hours, ideally overnight. To unmould, run warm water over the outside of the mould for 10 to 20 seconds and ease each stick straight up.
- Wrap the pops individually and label the bag or container: 5 mg THC per pop, 10 pops, 50 mg total, date, and 21+ only. If they share freezer space with regular treats, put them in a separate sealed box with the label facing out.
