Steps

  1. Crack the cardamom pods, cinnamon and allspice lightly under the flat of a knife or in a mortar — bruised spices give up more flavour than whole ones.
  2. Put the water and all the spices in a small saucepan, bring to a boil, then drop to a bare simmer and leave it uncovered for 20 minutes.
  3. Take the pan off the heat, add the tea, and steep for 5 minutes only — longer turns it bitter.
  4. Strain through a fine sieve into a jug, pressing nothing through, and discard the spices and tea.
  5. Return the liquid to the rinsed pan with the sugar. Warm gently, stirring, just until the sugar dissolves and the syrup looks glossy. It should never get above a lazy simmer.
  6. Off the heat, stir in the vanilla. Now let the pan cool completely to room temperature — this is the step that protects the dose.
  7. Pour the cold syrup into a measuring jug and bring it to exactly 240 ml with water, or pour off the excess.
  8. Stir in the tincture, mixing slowly for 30 seconds until it is evenly distributed, then bottle.
  9. To use: measure one tablespoon with a jigger into a mug, top with 180 ml hot or cold milk, and stir or froth. One glass at a time — the pitcher of milk stays plain.
  10. Refrigerate for up to two weeks and shake before pouring.
  11. Label the bottle: Cracked-Spice Chai Syrup · 80 mg THC total · 5 mg per tablespoon · 16 tablespoons · made [date] · 21+ only.
