Steps

  1. Set your target first: one stick of infused butter holds 60 mg THC, and the finished log gets cut into 12 coins at 5 mg each.
  2. Brown the infused butter over medium-low in a small pan, swirling until the milk solids are golden-brown and the smell goes nutty. Hold the pan below 175 °C / 350 °F and pull it off at the first toasty aroma.
  3. Pour it, solids included, into a bowl and let it cool to room temperature, then chill until it firms to a soft, spreadable paste.
  4. Weigh it and top up with softened plain butter to reach 227 g. Mash and beat until completely smooth and one even colour — this step is what makes the dose identical from coin to coin.
  5. Work in the miso paste, garlic, soy sauce if using, and chives. Keep stirring until you can't see any pale ribbons of miso; it should be a uniform tan all the way through.
  6. Lay the butter along a sheet of parchment, roll it into a log, and tighten it by pressing a ruler or bench scraper against the roll while pulling the paper underneath. Twist both ends.
  7. Chill until fully solid, at least 2 hours.
  8. Unwrap, lay a ruler next to the cold log, and mark 12 equal segments. Score each line, then slice cold and straight. Never cut these by eye.
  9. Melt a coin into hot rice or noodles, over a seared piece of salmon off the heat, on roasted squash, or on buttered corn. One coin per plate, then pause before deciding on more.
  10. Label it: "Brown Butter Miso Coins · 60 mg THC total · 5 mg per coin · 12 coins · made [date] · 21+ only." Write it on the parchment and on any container the coins travel in.
