Stoney says: start low, go slow — the forest isn't going anywhere. Wait 90 minutes before seconds.

Steps

  1. Line an 8″ square pan across the bottom and up two sides with a parchment sling, then grease the parchment lightly.
  2. Weigh the infused coconut oil into a small bowl and let it soften on the lowest possible warmth — a bowl set on the still-warm stovetop, or 10-second microwave bursts. It only needs to be liquid, never hot.
  3. In a large saucepan over medium heat, melt the butter and keep going until it foams, quiets down and leaves golden-brown flecks on the bottom — roughly 3 minutes past melting.
  4. Drop the heat to low, stir in the milk powder and keep the spatula moving across the base and sides for 1–2 minutes, until the mixture turns a coppery colour.
  5. Kill the heat. Stir in the salt, vanilla and 9 cups of the marshmallows, then return the pan to low heat and stir constantly until the marshmallows disappear into a smooth mass.
  6. Off the heat and off the burner, pour in the measured infused coconut oil and stir for a full 30 seconds so the dose is evenly spread through the marshmallow — this is the one step that decides whether every square matches. Then fold in the last cup of marshmallows with only two or three turns, leaving them mostly whole.
  7. Add the cereal and stir until no dry grains remain.
  8. Scrape into the pan quickly and press level and compact, right into the corners, so the slab is one even thickness.
  9. Cool to room temperature in the pan, about 1 hour. Lift out by the sling, trim a thin shaving off all four edges so the slab is square, then cut a 4×4 grid — 16 squares. Weigh a couple against each other; if one is noticeably heavier, re-cut rather than guess.
  10. Label the tin: Brown Butter Crispy Squares · 80 mg THC total · 5 mg per square · 16 squares · made [date] · 21+ only.
