Steps

  1. Set out eight 4 oz jars with lids and make sure there is flat, level space in the freezer for them.
  2. Tip the blackberries into a small saucepan with the lemon juice and sugar if you are using it. Crush the berries against the pan with a spoon, set over medium-low heat and let them break down, stirring now and then, until the mixture has reduced by about half and coats the spoon. Take it off the heat and cool it completely — room temperature or colder, no exceptions.
  3. Warm the condensed milk gently to body temperature: stand the measured milk in a bowl over a pan of hot (not boiling) water for a minute or two, or microwave it in 10-second bursts. It should feel barely warm on the back of a spoon, nowhere near hot.
  4. Melt the infused coconut oil until it is just liquid. Pour it into the warm condensed milk in a thin stream while whisking hard, then add the vanilla and salt and keep whisking for a full 30 seconds. The mixture should look glossy and uniform with no oil slick, droplets or beads on the surface. If you see any, whisk again — even dispersion is what makes every jar the same dose. Let it cool back to room temperature.
  5. In a separate bowl, whip the cold cream to stiff peaks.
  6. Fold the whipped cream into the condensed milk mixture in three additions, gently but thoroughly, until there are no pale streaks left. Streaks mean uneven dosing, so take the extra ten seconds.
  7. Divide the base evenly between the eight jars — spoon a little into each, then go around again, and finish by eye-levelling them so all eight sit at the same height. Dollop the cooled blackberry mixture over each jar and drag a skewer through once or twice to swirl.
  8. Lid the jars and freeze at least 4 to 6 hours, ideally overnight.
  9. Label every jar: *Blackberry Swirl Freezer Jar · 5 mg THC per jar · 40 mg per batch of 8 · made [date] · 21+ only.* Add the note "one jar, then wait two hours" to the lid. Start with one jar — or half of one — and give it time before deciding on another.
