Steps

  1. Set out an 8-cavity popsicle mould and its sticks. Eight cavities is the whole dosing plan, so don't improvise with a 6- or 10-cavity mould without re-running the maths.
  2. Blend the berries with 2 tablespoons of the honey until smooth — small blender, food processor or immersion blender in a jug. Set aside.
  3. Put the remaining 6 tablespoons of honey in a small bowl and warm it until it is just loose and barely warm to the touch. Pour in the melted infused coconut oil and whisk until the two go completely smooth and glossy, with no separate oil layer. This emulsion is your dose carrier.
  4. Let the honey mixture cool to room temperature, then add it to the room-temperature yogurt and blend with an immersion blender for about 20 seconds, or whisk vigorously for a minute, until the yogurt is uniform and satiny. Cold yogurt will make the oil seize into specks, so both components should be at room temperature. Scrape the bowl and blend once more so nothing dosed is left clinging to the sides.
  5. Fill the mould with alternating spoonfuls of yogurt and berry purée, going around all eight cavities evenly rather than filling one at a time. Divide any remainder equally — a teaspoon in each — until the bowl is empty, then level the cavities so they all sit at the same height.
  6. Drag a skewer or thin knife once through each cavity for a marbled look. Don't overmix.
  7. Fit the sticks and freeze 4 to 6 hours, until fully solid. To unmould, run the outside under warm water for a few seconds.
  8. For storage, pull the pops and lay them flat in a freezer bag or airtight box, then label the container: *Berry Swirl Yogurt Pops · 5 mg THC per pop · 40 mg per batch of 8 · made [date] · 21+ only.* One pop is the serving — eat it, then wait a couple of hours before deciding whether you want a second.
