Steps

  1. Confirm the dose first: the infused butter for this batch carries 60 mg THC total, which lands at 5 mg per coin across 12 coins. Unsure of your butter? Make a half-strength test log and taste your way up another day. Start low, go slow.
  2. Blot the caramelized onion properly — wet add-ins make a soft log that smears instead of slicing, and a smeared log can't be scored accurately.
  3. Brown the full amount of infused butter in a light-coloured pan over medium-low heat until the solids are amber and it smells toasted, 4 to 6 minutes, holding the fat under 160 °C / 320 °F.
  4. Tip it straight into a cool bowl and scrape the pan bare — the toasted specks are both the flavour and part of the dose.
  5. Cool in the fridge to a soft, stirrable solid, about 30–40 minutes, stirring once so nothing settles.
  6. Weigh, then add softened plain butter until the bowl hits 227 g.
  7. Beat the two butters together for a full minute until the colour is completely uniform. This is the dose-accuracy step, not a cosmetic one.
  8. Fold in the roasted garlic, onion, parsley, thyme, salt and pepper. Mix 30 seconds more; taste a fingertip-sized smear for seasoning only.
  9. Mound onto parchment, roll into a log roughly 20 cm long and about 4 cm across, keeping the thickness even end to end, and twist the ends closed.
  10. Refrigerate until solid, at least 2 hours.
  11. Unwrap cold, lay a ruler along the log and mark 12 equal divisions, then cut on the marks. Measured, not eyeballed. Each coin is 5 mg.
  12. Label it. On the wrap: Infused browned steakhouse butter — 12 coins, 5 mg THC per coin, 60 mg total — made [date] — 21+ only. Fridge for a week, freezer for three months, label travelling with it either way.
  13. Serving note: one coin melting over a rested steak, roast chicken, or a tray of roasted potatoes as they come out.
