Steps

  1. Do the dose maths before you touch a pan. Your infused butter must add up to 60 mg THC for the whole batch; 60 ÷ 12 coins = 5 mg each. If you're unsure of your butter's strength, make a smaller test batch first and treat it as a lower dose. Start low, go slow.
  2. Put all the infused butter in a light-coloured saucepan over medium-low heat. Let it foam, then watch for the foam to subside and the milk solids to turn amber and smell like toasted hazelnut — 4 to 6 minutes. Keep the fat under 160 °C / 320 °F and pull it the second it turns.
  3. Pour it immediately into a cool bowl, scraping the pan clean with a silicone spatula so every browned speck and every milligram goes with it. Waiting in the hot pan is how butter goes from amber to bitter.
  4. Chill the browned butter until it firms up but is still soft enough to stir, 30–40 minutes in the fridge. Stir it once or twice as it sets so the solids stay suspended instead of sinking.
  5. Weigh the browned butter, then add softened plain butter until the bowl reads 227 g exactly.
  6. Mash and fold with a fork or spatula for a full minute — longer than feels necessary. Even colour means even dose; streaks mean some coins are stronger than others.
  7. Fold in the garlic, parsley, dill, salt and pepper and mix another 30 seconds, until the flecks are evenly distributed edge to edge.
  8. Scrape the butter onto parchment in one line, roll it into a log about 20 cm long and even in thickness along its whole length, and twist the ends shut. An even cylinder is what makes the coins equal.
  9. Chill at least 2 hours, until firm all the way through.
  10. Unwrap the cold log, lay a ruler alongside it, and mark 12 equal score marks with the back of a knife — measure them, never eyeball them. Slice on the marks. Each coin is 5 mg.
  11. Label it. Wrap the coins or the scored log and write on the label: Infused browned garlic-dill butter — 12 coins, 5 mg THC per coin, 60 mg total — made [date] — 21+ only. Store in the fridge and keep it away from anyone who didn't read the label.
  12. Serving note: one coin on a hot steak, a split baked potato, or an ear of corn at the table.
