Steps

  1. Rinse and shake dry your chosen herb. One herb per batch — blends muddy the flavour and make the syrup harder to identify later on the shelf.
  2. Bring the water to a boil in a small pan, then whisk in the sugar until the liquid runs completely clear.
  3. Drop the herb in, let it bubble for one minute, then kill the heat entirely.
  4. Leave the herb sitting in the pan for 30 minutes as the syrup drops in temperature. Lift the herb out with a slotted spoon and pour the syrup through a fine sieve.
  5. Cool it all the way down. Room temperature is not good enough on a warm day — get the jar into the fridge until the syrup is cold to the back of your hand, at least an hour. Hot syrup will flash off an alcohol tincture and you'll lose the dose you just measured.
  6. Measure exactly 10 level tablespoons (150 ml) of cold syrup into your dosing jar. Bottle whatever is left over separately and mark it NO DOSE — that surplus is for guests who aren't dosing.
  7. Add the full 50 mg of tincture to the dosing jar. Stir slowly for a solid 30 seconds, lid it, and shake for another 20. Shake again before every single pour; tincture drifts in sugar syrup as it sits.
  8. To build a drink: jigger one tablespoon of syrup into an ice-filled glass, add lime, top with soda, stir once. One spoon per glass, one glass to start, then wait a good two hours before anyone decides about a second.
  9. Label the bottle before it goes in the fridge: herb and date, 50 mg THC total · 10 servings · 5 mg per tablespoon · 21+ only. Tape a jigger to the neck if the bottle is going anywhere near a party.
