Steps

Ingredients:
- 7 oz sweetened condensed milk (half a 14 oz can)
- 2 Tbsp coconut oil total — enough infused coconut oil to equal 30 mg THC, topped up with plain coconut oil to reach 2 Tbsp
- 2 tsp vanilla bean paste (or 1½ tsp vanilla extract)
- Generous pinch fine sea salt
- 1 cup (240 ml) heavy cream, very cold
- 6 × 4 oz jars with lids

Steps:
1. Put your mixing bowl and beaters in the freezer for 15 minutes. Line up six 4 oz jars on the counter.
2. Do the dose maths first. Work out how many teaspoons of your infused coconut oil give you 30 mg, then make up the difference with plain coconut oil so you have 2 Tbsp of fat in total. Melt it gently — barely warm, never smoking.
3. Warm the condensed milk in a small pan or 20 seconds in the microwave, just to body temperature. It should feel lukewarm, nothing close to hot.
4. Pour the melted oil into the warm condensed milk in a thin stream, whisking hard the whole time, until the mixture looks glossy and uniform with no oil slick on the surface. Whisk in the vanilla and salt. Let it cool to room temperature, whisking once or twice so it stays emulsified.
5. Beat the cold cream in the chilled bowl, starting slow and working up to high, until it holds stiff peaks.
6. Fold the condensed milk mixture into the whipped cream with a spatula, gently but thoroughly — streaks mean uneven portions.
7. Divide between the six jars. For accuracy, put a jar on a kitchen scale, note the weight of the first fill, and match the other five. Lid them, press the surface flat, and freeze at least 6 hours or overnight.
8. Label each jar with the date, the flavour and 5 mg THC per jar — one jar per person, 21+ only. Write it on the lid, not on a sticker that can fall off in the freezer.
