Steps

Ingredients:
- ⅓ cup (80 ml) cold heavy cream
- 1¼ cups whole-milk Greek yogurt, plain or vanilla, taken out of the fridge 20 minutes ahead
- 3½ Tbsp honey
- 2 Tbsp coconut oil total — enough infused coconut oil to equal 50 mg THC, topped up with plain coconut oil to reach 2 Tbsp
- Scant 2 cups fruit, chopped small — strawberries, mango, blueberries, peaches, whatever's good
- Pinch of salt
- 10-cavity popsicle mould and sticks, thoroughly dry inside

Steps:
1. Work out the infused coconut oil that gives you 50 mg for the batch and top it up with plain coconut oil to a full 2 Tbsp.
2. Warm the honey and the coconut oil together in a small pan over low heat, or in short bursts in the microwave, only until both are fluid. Whisk for 20 seconds until it looks like a single smooth syrup. Let it cool slightly but don't let it set.
3. Whisk the cream until it thickens and holds whisk marks but hasn't reached soft peaks — you want body, not volume.
4. Put the room-temperature yogurt and salt in a bowl and pour in the honey-oil syrup while whisking briskly. Keep going until it's completely uniform; if the yogurt is too cold the oil will speck, so warm the bowl slightly with your hands and whisk again if needed.
5. Fold the yogurt mixture into the whipped cream, then fold through the chopped fruit so it's evenly scattered — a pop with all the fruit at one end still holds the same dose, but even distribution looks better and tastes better.
6. Make sure the mould cavities are bone dry, then fill them, tamping down with a stick to push out air pockets and tapping the mould on the counter. Weigh the filled jug before and after if you want the portions exact; otherwise fill each cavity to the same line.
7. Insert sticks and freeze at least 4 hours. Let them stand at room temperature for a few minutes before pulling them free.
8. Label the storage container clearly: 5 mg THC per pop, 10 pops, 50 mg total, date made, 21+ only. These look exactly like ordinary fruit pops, so the label and a separate sealed box are non-negotiable.
