Steps

Ingredients:
- ½ cup (about 25 g) flat-leaf parsley leaves, very finely chopped
- 4 cloves garlic, minced
- 1 small shallot, finely minced (optional)
- 1 tsp dried oregano
- 1 small red chile, seeded and diced, or 2 tsp red pepper flakes
- 3 tbsp red wine vinegar
- 1 tsp fine salt
- ½ tsp freshly ground black pepper
- ⅔ cup (160 ml) extra virgin olive oil, plus a little extra to top up the volume
- 60 mg THC tincture (3 ml of a 20 mg/ml tincture — recalculate for your own tincture's strength)

Steps:
1. Chop the parsley fine, mince the garlic and the shallot if you're using it. Everything stays raw and cold from here on.
2. Tip the parsley, garlic, shallot, oregano, chile, vinegar, salt and pepper into a medium bowl and stir to combine.
3. Pour in the olive oil and stir until the sauce looks glossy and spoonable. Leave it chunky — this is not pesto.
4. Let it sit at room temperature for 15 minutes so the garlic and oregano bloom into the oil.
5. Measure the sauce: you want exactly 240 ml / 1 cup. If you're short, whisk in olive oil a teaspoon at a time until you hit the mark. This step is the whole dosing system, so don't eyeball it.
6. Add the 60 mg of tincture and whisk hard for a full 30 seconds, scraping the bowl so the dose is spread through every spoonful. No heat, no exceptions.
7. Decant into a clean 250 ml jar, seal, and chill. Stir or shake before every use — the solids settle.
8. Label the jar: Chimichurri · 60 mg THC total · 5 mg per tablespoon · 16 tablespoons · made [date] · 21+. Keep a measuring spoon in the jar and serve by the level tablespoon, never by drizzle.
9. 21+ only. Start low, go slow — one tablespoon, then wait at least two hours before considering more.
